Thai Spring Rolls are loved by all and loaded with vegetables, vitamins and fiber. Try this as an appetizer or larger meal by adding a side salad.

 Thai Spring Rolls Recipe

Total Time: 15 minutes
 Serves: 6-8 INGREDIENTS: 16 pieces of rice paper 2 cups cucumber 2 cups shredded lettuce 2 cups shredded carrots 2 red bell peppers, seeded and sliced very thin 1 cup mung bean sprouts 1 cup chopped fresh mint 1 cup chopped fresh basil 1 cup chopped fresh cilantro 1 small onion chopped 2 tablespoons balsamic vinegar Sea salt to taste Warm water

DIRECTIONS: Chop all vegetables and fresh herbs until uniform in size (1/4″ or smaller pieces). Mix in bowl with remaining spices and balsamic vinegar. Place warm water in a bowl. Soak rice paper in the water until soft. Lay rice paper on a flat surface. Place approximately 1/4 cup of the mixture on one end of the rice paper. 1. Can Help Lower High Cholesterol Levels and Protect Against Heart Disease
One 2011 study published in the Journal of Human and Experimental Toxicology found that mung beans are highly effective at inhibiting LDL “bad” Cholesterol oxidation. Mung beans have the ability to regulate cholesterol levels because their antioxidants act like potent free-radical scavengers, reversing damage done to blood vessels and lowering inflammation. Used in stir fries and Asian cooking, the spicy, pungent underground rhizome of the ginger plant is firm with a striated texture. It may be yellow, white or red, depending on the variety, and is covered with a thin or thick brownish skin, depending on whether the plant was harvested mature or young.

As it turns out, plenty. A 2009 study found ginger supplements when taken alongside anti-vomiting medicine reduced chemotherapy-induced nausea in patients by 40 percent.

Studies have shown it can also ease muscle pain, eliminate inflammation, help with painful menstruation and migraines, and may even slow or kill ovarian and colon cancer cells.

 Nausea and motion sickness 
Ginger is well known for its ability to ease nausea, and it's helpful for motion and sea sickness. Women suffering from morning sickness were given beverages with ginger during the first trimester of pregnancy, and when compared with women given a placebo, ginger alleviated the nausea in a large majority of the cases. 

Diabetes complications 
 Studies show ginger may reduce urine protein levels, decrease water intake and urine output, and reverse proteinuria, which is kidney damage caused by too much protein in the urine. Ginger may also protect nerves in diabetics and lower blood fat levels. "Ginger can help increase circulation, thin blood, and lower both blood pressure and cholesterol," says author Steelsmith. 

Arthritis 
A placebo-controlled, double-blind, crossover study published in the journal Osteoarthritis Cartilage found patients with painful arthritis in the knee who were given ginger vs. a placebo experienced significantly less pain and loss of movement compared to those taking the placebo. 

Cold and Flu 
 Chinese medicine practitioners commonly prescribe ginger to treat symptoms of colds and flu. The root acts as an antihistamine and decongestant, two cold-easing effects that can help with symptoms. 

A Dose of Ginger
Ginger is susceptible to heat and oxygen, so handle carefully when using this herb and store in a cool, dry place or the crisper bin of the refrigerator for two to three weeks. 

 To make a tea, shave the skin from a piece of fresh ginger, cut off a 2-inch chunk and slice it into 2 cups of water to simmer covered for 20 minutes. Remove the slices and pour into a mug and add honey and a squeeze of lemon. Eat the slices after drinking the tea. Drink up to three cups of tea per day, before meals. 

 Ginger capsules or powder are also available. Take at least 2,000 milligrams three times or more per day with or without food. 


 Do not take ginger with blood thinners without first consulting your health care provider. Ginger may also lower blood sugar and interact with blood pressure altering medications, so speak with your physician prior to using ginger if you take any medications.

What are the healthy foods? Many people will ask this question if we discuss them about the right foods to eat. Health Foods are consist of food which are high in fiber. These foods are vegetables, fruits and grains. For me my diet is consist of vegetables and fruits but I eat fish too for protein. I ate poultry, pork and/or beef once a week or every two weeks. Beans are also good source of protein if you are a Vigan or vegetarian.


Green Leafy Vegetables are good source of vitamins like A, C and K and minerals such as calcium and iron. You can add canola or olive oil when eating this type of vegetables in order to absorb the vitamins and minerals in our body. Examples of these vegetables are lettuce, spinach, kale, broccoli and other related dark color vegetables.


Healthy Food is necessary in order to have a healthy body and sound mind. Fruits are also very good for our health as the saying goes "An apple a day will keep a doctor away". Fruits are high in fiber and it will also quench your thirst especially during summer. Water Melons which is composed mostly of water is available during summer and cheaper.

I have previous issue about cancer prevention and how to prevent it. Now I will give some remedies from our mother nature. These fruits and vegetable base on the studies believe to be good for the body and they are abundantly available almost anywhere in the world.

Here are they list and why they are considered as anti-cancer:

1. Broccoli-

Research has revealed that a chemical component called indole-3-carbinol can combat breast cancer by converting a cancer-promoting estrogen into a more protective variety. The phytochemical sulforaphane raises the levels of certain cancer-fighting enzymes that defend the body from cigarette smoke, fumes, pesticides & other known carcinogens.

Diet tips: Broccoli leaves actually contain more beta-carotene (i.e. pre-Vitamin A) than the florets - use leaves in purees, soups, and stir-fries. To preserve broccoli’s valuable nutrients, steam or microwave, being careful not to overcook. Avoid garnishing broccoli with fatty cheeses and creams instead, squeeze on some lemon juice or sprinkle with toasted breadcrumbs.

2. Papaya- 

How it combats cancer:
Its plentiful store of vitamin C works as an antioxidant and may also reduce absorption of cancer-causing nitrosamines from the soil or processed foods. Papaya contains folacin (also known as folic acid), which has been shown to minimize cervical ysplasia and certain cancers.

Diet tips: Choose papayas that are at least half yellow in the store - fully green ones were probably picked too soon and won’t ripen properly. You can serve papaya in fruit salad, add it to a garlic-and-spinach pasta mixture, or just eat it on its own, letting the juice dribble down your arm.

Garlic’s immune-enhancing alliums compounds block carcinogens from entering cells and slow tumor development. Diallyl sulfide, a component of garlic oil, has also been shown to render carcinogens in the liver inactive. Studies have linked garlic - as well as onions, leeks, and chives - to lower risk of stomach and colon cancer.

Diet tips: Add raw garlic to salads, use it fresh in marinades and sauces;
rub freshly cut garlic around the insides of salad bowls and over chicken
And fish fillets. Avoid dried or powdered garlic, which is less
concentrated - and less effective.


4. Kale-

How it combats cancer: Research has shown that indoles, nitrogen compounds found in kale and other leafy greens, may help stop the conversion of certain lesions to cancerous cells in estrogen-sensitive tissues. In addition, isothiocyanates, phytochemicals found in kale, are thought to suppress tumor growth and block cancer-causing substances from reaching their targets.

Diet tips: A cruciferous vegetable, kale requires quick cooking - blanching or steaming - to preserve its nutrients. When you’re done, save the nutrient-rich cooking liquid for soups or sauces. You can also use whole large leaves to wrap fillings or to layer in lasagna.

5. Sweet Potato-

How it combats cancer: This nutrient-dense food contains many anticancer properties. It’s loaded with beta-carotene, which may protect DNA in the cell nucleus from cancer-causing chemicals outside the nuclear membrane.

Diet tips: Go for freshness when picking potatoes - canned varieties contain less beta-carotene and vitamins C and B. Naturally sweet and creamy, mashed sweet potatoes can be enhanced with a little apple juice. Or whip the cooked tubers with orange zest or orange juice and season with cinnamon, nutmeg, and ginger.

6. Grapefruit-

How it combats cancer: Grapefruits, like oranges and other citrus fruits, contain monoterpenes, believed to help prevent cancer by sweeping carcinogens out of the body. Some studies show that grapefruit can inhibit the proliferation of breast-cancer cells in vitro. It also contains vitamin C, beta-carotene, and folic acid.


Diet tips: Grapefruit can be sweetened with brown sugar or a drizzle of maple syrup or honey; vanilla extract, fresh mint, and almonds also accent the fruit’s flavor. Grapefruit juice will give you the antioxidants and phytochemicals that fight cancer, but it’s missing the fiber that fresh, whole grapefruit offers.

7. Avocado-
How it combats cancer:
Avocados are rich in glutathione, a powerful antioxidant that attacks free radicals in the body by blocking intestinal absorption of certain fats. Ounce for ounce, avocados also supply 60 percent more potassium than bananas and are a strong source of beta-carotene.

Diet tips: Store avocados at room temperature until they soften. If you don’t eat the fruit immediately after cutting, sprinkle on some lemon or lime juice to keep it from darkening. Add chunks or slices to salads and sandwiches or spread mashed avocado on bread.
