Canola oil is touted as the healthiest oil due to the fact that it has low saturated fats and high monounsaturated oil content; the latter is almost 60% with beneficial omega-3 fatty acids profile. Canola Council in Canada said that it is completely safe to use Canola oil and is the healthiest oil used in cooking. The old rapeseed has a very high content of erucic acid and glucosinolates which are both undesirable to human consumption. Erucic acid is implicated with cancer and rancidity while glucosinolates are goitrogenic. Canola oil reduces the erucic acid from 0.5% to 5% more or less without eradicating them completely. Rapeseed is used in Canada for a long time though there is a record of side effect but they weighed that it has more beneficial advantages than the disadvantages.
