Before I proceed to my recipe for another version of "Guinatan", I would like to add more benefits of cinnamon. Cinnamon relieves diarrhea and nausea. It counteracts congestion, aids peripheral circulation. Warms the body and enhance digestion, especially metabolism of fats. Also fights fungal infection. Useful for diabetes, weight loss, yeast infection and uterine hemorrhaging. Caution-should not be used in large amount during pregnancy.
Here's the recipe so simple and easy to make:
You can look for the package of assorted legumes and in it there's also a small packet of tiny tapioca. Boil the water and soon it simmer for everything in the package till everything is cook. You can add bigger tapioca but you have to cook them separately as it takes longer to cook. While in the process of cooking those legumes and tapioca, you can put the cinnamon stick.
You can also add 1 teaspoon of vanilla and a pinch of salt and sugar or brown sugar when everything is cooked and add coconut milk and if you prefer soy milk , you can do so.
You can find that assorted package of legumes with tapioca in the Asian Supermarket in the aisle of beverage, along tea section or just go all around every aisle for sure. If you can't find them, make your own. You can use dried mung beans, red beans, all kinds of beans and also a little of sweet rice, sagu and, tapioca. Boil all of them till fully cook, just cook separately the tapioca, only the large ones. The small tapioca pearl can be cook together with the rest of the beans. To make it more yummy, when everything is cooked with coconut milk, before serving you can add "nata de Coco " and strips of bottled ripe" Langka or jackfruit".
